The twist in this deck is Gimli being a defensive resource engine. The cards needed for that are Gimli, The Day's Rising, Dwarven Shield, and Armored Destrier. So it's a big chunk of deck space, but it satisfies your need to 1) defend multiple attacks and 2) generate resources. Gimli will take damage, so you will also need healing somewhere. Warden of Healing can fit into this deck. I would sub them in for Miner of the Iron Hills. If you want to get the combo going more reliably, put the extra copies in for The Day's Rising and Dwarven Shield, and take out maybe Hardy Leadership and a Narvi's Belt.

Use it like this: Gimli defends an attack from one little enemy and doesn't take damage. He gets a resource from The Day's Rising. Ready him with Armored Destrier. Then, defend an attack from a big enemy (discard its shadow effect thanks to the Destrier, and he can safely defend). He will take damage, and get a resource from Dwarven Shield. So, the cards provide two defenses and two resources every round, in an ideal scenario. This will play out most often in games that have higher player counts.

I built it for Gimli with the idea that he would then be able to use one of those resources per round to activate his ability, and flexibly ready any hero on the table in a multiplayer environment. In solo, he can ready Dain (which means Dain will have defended, giving you potential to block 3 attacks each turn. Dain might also get his own Dwarven Shield), or he can ready Ori for 3 attack power (with Dain ready).

The rest of this deck is a pretty standard leadership-lore Dwarf swarm. Thorin is removed to put Gimli in here. There are other ways to build it, of course (Thorin himself is a great target for Gimli's ability). So, I see this version as a 'more fun' version of the classic Dwarf swarm (because for me, 'more fun' means 'more opportunities to make decisions'). Steward of Gondor is in here, giving you up to 7 resources per round (or 8 if Dain is also defending with a shield).

I've also built this with Gimli in a Gondor swarm deck, with Denethor providing early game resources to get the cards on the table faster, and with Galdor of the Havens as the 3rd hero in the deck to help you get all 3 cards in the combo as quickly as possible. Or use that 3-hero combo but ditch the Gondor swarm, and go ranged-sentinel specialist (you could pass out DĂșnedain Cache and DĂșnedain Signal all over the table!).
